THE FOLLOWING ARE RECOMMENDATIONS BASED ON THE BOOK:

Most greens will keep for a longer period of time in a ventilated plastic bag.

ARUGULA - does not store well, wash in cold water and wrap in a damp paper towel and store in plastic bag.

LETTUCE - soak leaves in sink allowing dirt to drop to the bottom, dry in spinner and wrap in kitchen or damp paper towel and plastic bag and keep in crisper. Lettuce will keep longer if cleaned and dried right away.

ASIAN GREENS (Komatsuna, Hon Tai Tsai, Tot soi) - wash and dry and keep in plastic bag in refrigerator.

BOK CHOY (mei ching choi) - do not wash until ready to use. Keep in the crisper.

EDAMAME - (soy beans) will last in your refrigerator in a plastic bag if you can resist boiling them in salt water and eating them right out of the shell. (5-15 min or just until they start splitting open)

SNAP BEANS - best eaten within the first few days of receiving them, but will last in the refrigerator in paper bag or a paper towel and plastic bag for up to a week.

BEETS - Separate greens from beets and cook greens within a few days. Keep beets in the coldest part of your refrigerator. “The longer from the ground - the less sweet”

BROCCOLI - wrap in damp kitchen or paper towel and then in plastic bag in refrigerator

BROCCOLI RAAB - (see Broccoli) Does not keep for more than a few days.

CARROTS - cut tops off and discard. Keep carrots in plastic bag in crisper.

NAPA CABBAGE - keep wrapped in plastic wrap in crisper for up to a week.

COLLARDS - keep greens in the coldest part of your refrigerator.

CUCUMBERS - do not have a long shelf life, they will keep longer if wrapped in a paper towel and plastic bag. Store in the warmer part of your refrigerator.

EGGPLANT - it’s best to store eggplants in a cool place (in a plastic bag) rather than the refrigerator. To keep eggplants longer than a few days wrap in a paper bag and keep in a warmer part of the refrigerator.

FENNEL- keep in the fridge in a plastic bag.

GARLIC - keep in a cool, dry, well ventilated place.

HERBS - store in plastic bag with a slightly damp paper towel. Cilantro and Basil will last on your kitchen counter with their roots in a glass of water. 

JERUSALEM ARTICHOKES - wash and dry thoroughly, wrap in paper towel then in plastic and store in refrigerator.

KALE - wrap in ziploc plastic bag or airtight container and keep in the coldest part of the refrigerator only for a few days. If kale looks limp, cut off the ends and soak in lukewarm water for a few minutes, shake dry and replace in ziploc or airtight container.

KOHLRABI - cut off leaves from globe - wrap loosely in plastic bag and refrigerate - can last for up to a week.

LEEKS - wrap in damp paper towel and plastic and keep in crisper. Remember to rinse leeks well before using as dirt can get trapped in the layers of the leek.

ONIONS - Sweet onions like the Ailsa Craig and the red onion should be used right away. Keep unused portion in damp paper towel in the refrigerator. Storage onions should be kept in a cool, dry, well ventilated place

SNAP PEAS - eat right away. Will keep in plastic bag in crisper for a few days.

PEPPERS - keep in a plastic bag in the refrigerator for up to a week.

POTATOES - fingerling potatoes do not keep as well as bigger potatoes with a tougher skin and more starch. Keep in a paper bag in a cool dry place. Do not refrigerate.

RADISH - Salad and Daikon varieties. Remove tops. Radishes will last longer if you soak them in luke warm water for just a few minutes, damp dry and store in the crisper in a ziploc or airtight container.

RHUBARB - keep in coldest part of refrigerator in plastic bag.

SUMMER SQUASH - keep in paper towel in a plastic bag in the warmer part of the refrigerator.

WINTER SQUASH - keep in well ventilated, dry, cool area. Unused portions can be kept in the refrigerator in plastic wrap.

SWISS CHARD - keep in refrigerator in plastic bag in the coldest part of your refrigerator.

TURNIPS - remove tops and store in plastic bag in the coldest part of your refrigerator. Red top turnips and Hakurei turnips should be used right away- the Macomber turnips will last longer.

TOMATOES - do not refrigerate. Greener tomatoes will ripen in a brown paper bag - heat ripens the tomato not sunlight.

FLOWERS - trim stems and change water daily to promote longevity.
